Our personal recommendation is to drizzle some smooth cashew nut butter or smooth macadamia nut butter over the granola to enhance its taste, adding a creamy, rich layer of flavour that perfectly complements the crunchy texture and natural sweetness of the nuts, seeds and dried fruits. ๐Ÿ˜‹

Ingredients:

  • Dry Ingredients:

    • 1 cup puffed quinoa
    • 1/2 cup cashew nuts (roughly chopped)
    • 1/2 cup macadamia nuts (roughly chopped)
    • 1/2 cup pecan nuts (roughly chopped)
    • 1/2 cup walnuts (roughly chopped)
    • 1/2 cup pistachios (roughly chopped)
    • 1/2 cup hazelnuts (roughly chopped)
    • 1/4 cup sunflower seeds
    • 1/4 cup pumpkin seeds
    • 2 cups rolled oats
    • 1/2 cup shredded coconut (optional)
  • Wet Ingredients:

    • 1/3 cup honey or maple syrup
    • 1/3 cup coconut oil (melted)
    • 1 tsp vanilla extract
    • 1/2 tsp cinnamon
    • 1/4 tsp sea salt
  • Dried Fruit:

    • 1/2 cup dried prunes (chopped)
    • 1/2 cup dried apricots (chopped)
    • 1/4 cup dried goji berries

Instructions:

  1. Preheat the oven: Preheat your oven to 325ยฐF (160ยฐC) and line a large baking sheet with parchment paper.

  2. Mix the dry ingredients: In a large bowl, combine the puffed quinoa, cashews, macadamias, pecans, walnuts, pistachios, hazelnuts, sunflower seeds and pumpkin seeds.

  3. Prepare the wet ingredients: In a separate bowl, whisk together the honey (or maple syrup), melted coconut oil, vanilla extract, cinnamon, and sea salt until smooth.

  4. Combine wet and dry ingredients: Pour the wet mixture over the dry ingredients, stirring well to ensure everything is coated evenly.

  5. Bake the granola: Spread the granola mixture in an even layer onto the prepared baking sheet. Bake for 20โ€“25 minutes, stirring halfway through, until golden and crisp. Keep an eye on the granola to prevent over-browning.

  6. Cool and add dried fruit: Once the granola is baked and golden brown, remove it from the oven and allow it to cool completely on the baking sheet. After cooling, stir in the chopped dried prunes, apricots, and goji berries.

  7. Store and enjoy: Store the granola in an airtight container for up to 2 weeks.
